Easy Potato Soup

Image: Soup BowlThis recipe takes a little more work than the other recipes in Randy's Homestead, but it is worth it!

 

4 Med-Small Potatoes, peeled
1/2 Large Onion, diced
1 Carrot, peeled 
1 Tbsp Oil
optional vegetable broth
optional soy milk
  salt and pepper

 

Cut potatoes and carrot into 1-inch cubes, cover completely with water (vegetable broth is good here also) in a Dutch oven. Bring to a boil.

Sauté onion in oil until brown.

When potatoes are soft, pour out most of the cooking water except for the last couple of inches, and add most of the onion.

Set aside a few chunks of potatoes and some of the onions, then blend the big pot of potatoes and onions with a hand-held blender or mixer being very careful not to splash!

Add water, vegetable broth, or soy milk as needed to create the desired soup-like consistency.

Mash the set-aside potatoes a little, then add them and the onions back to the big pot and stir. Add salt and pepper to taste.

Mix all the ingredients and warm over a medium heat. Serve when thoroughly heated.
