Broccoli-Cheese SoupYears ago, this great recipe was given away by a restaurant chain to anyone who asked. Although they don't do that any more, I've kept a copy to share with my friends. Don't ask me to name the restaurant because I won't! However, the recipe is here for your enjoyment.
Steam the broccoli until tender and cut into bite-size pieces. Place half-and-half and water in the top of a double boiler. Add cheese, salt and pepper. Heat until the cheese is melted. Then add broccoli. Mix cornstarch and water in a small bowl, stir into cheese mixture in double boiler and heat over simmering water until soup thickens. Serves 6-8 |
