Broccoli-Cheese Soup

Years ago, this great recipe was given away by a restaurant chain to anyone who asked. Although they don't do that any more, I've kept a copy to share with my friends. Don't ask me to name the restaurant because I won't! However, the recipe is here for your enjoyment. 

Image: Soup BowlThis recipe is a little harder to make than the others on the homestead - but it is worth the effort!

 

1 1/2 lbs Fresh Broccoli
2 Cups Water
3/4 tsp Salt
1/2 Cup Cornstarch mixed with 1Cup Cold Water
1 Pint Half-and-Half
1 lb Pasteurized Processed Cheese
1/2 tsp Ground Pepper

 

Steam the broccoli until tender and cut into bite-size pieces.

Place half-and-half and water in the top of a double boiler. Add cheese, salt and pepper. Heat until the cheese is melted. Then add broccoli. 

Mix cornstarch and water in a small bowl, stir into cheese mixture in double boiler and heat over simmering water until soup thickens. Serves 6-8
