Easy Sugar Cookies #2

1 Package Active Dry Yeast
½ Cup Warm Water
1 Cup Butter (the real stuff!)
2 ¼ Cups All-Purpose Flour
1 Tbsp Vanilla
½ Cup Sugar

Preheat oven to 375° F.

Soften yeast in warm water. Cream butter in large mixer bowl. Blend flour, yeast, and vanilla extract in at low speed bit by bit.

Shape dough into 1 ½ inch balls. Then, roll each ball in the granulated sugar.

Place sugar cookies on greased cookie sheets. For light, chewier cookies, let them rise in a warm place (on top of the stove as it's pre-heating works well) for 15 minutes before baking.

Bake for 20 to 25 minutes.

Let cool on sheet a few minutes before removing.
